Garlic Parmesan Egg Spaghetti Nests

What to do with leftover spaghetti?  Am I the only one who inevitably makes enough spaghetti to feed a family of 10 for 2 days?  No matter how hard I try, I always make too much spaghetti.  Whether you have leftover spaghetti, or are simply boiling a fresh pot of water for this recipe, you won’t be sorry you did.  With just a few simple ingredients, you can turn plain noodles and eggs into a brunch or dinner that will wow your family and friends.

Eggs and pasta you ask? Yes, yes, yes! Think pasta Carbonara, luscious silky noodles covered with a sauce made from eggs, cream and bacon. This recipe was born out of my love for Carbonara tempered with my love for fitting into my jeans.  Sometimes you have to trade the cream for a healthier choice like olive oil.  Even though the olive oil is high in fat, remember it is a heart healthy fat.  We are also choosing whole wheat pasta and getting our protein from the eggs, so far so good!  It’s a figure friendly Italian dish that I know Sophia Loren would approve of … plus these little egg nests just look so gosh darn cute!  Your family and friends will think they are sipping espresso at an outdoor Italian bistro and will become instant fans!
