The holiday season is in full swing—my favorite time of the year! It’s a period full of quality time with friends and family, along with celebrations galore. Pumpkin Spice Mug Cake >

On 11.14.2016 by Laura Basher

Now that Halloween is over and Thanksgiving is around the corner, I can totally relish the fact that fall is in full bloom. Here in San Diego, it doesn’t cool off and feel like autumn until November. We still haven’t given up our flip flops, but we just wear them AND our sweaters! This is also the time of the year where I make homemade pumpkin purée. I always have a stash of pumpkin goodness in the freezer. I like to sneak pumpkin into everything I make: soups, chili, and even pancakes! My pumpkin spice mug cake only needs 2 tablespoons of pumpkin purée. A mug cake is a super easy and quick way to enjoy a warm and fluffy cake in minutes. The baking Read More >

Baked Macaroni and Cheese Recipe >

On 10.27.2016 by Paula Jones

Macaroni and cheese—it's an American staple. Who doesn't love mac and cheese, right? There are so many ways to make it and so many add-in possibilities. It might be the perfect food, because it's completely customizable. It starts with a stove top or baked version. Today we're exploring a classic version of baked macaroni and cheese. It's the perfect accompaniment to most meals or, if you're like me, perfect on its own. Baked is what I grew up on and it's my go-to. It starts with a short pasta. We like shells or elbows. Feel free to try rotini, penne, or farfalle. You'll want to be sure you cook the pasta just shy of al dente. No worries, it will finish cooking in the oven. Read More >

Pumpkin Cupcakes with Marshmallow Frosting and Caramel Drizzle Recipe >

On 10.24.2016 by Laura Davidson

Having worked as a baker for a dessert food truck, I have a strong affinity for cupcakes. I’ve made thousands upon thousands of them. They might have started as a food trend but, in my humble opinion, they’re here to stay. These pumpkin cupcakes with marshmallow frosting and caramel drizzle are the perfect portable, festive, fall dessert. Inspired by classic sweet potato casserole with marshmallows, the pumpkin cupcakes are topped with a light and fluffy marshmallow frosting and finished with a light drizzle of homemade caramel (or store-bought caramel if you are short on time!). Similar to homemade meringue, the marshmallow frosting is made with just a handful of ingredients: Davidson's Safest Choice® pasteurized egg whites, fine granulated sugar, cream of tartar, salt, and pure Read More >

An Egg-cellent Addition to a Vegan Diet >

On 10.21.2016 by Chantel Arsenault

Vegetarians come in many varieties. Some incorporate dairy and eggs into their diets. Ovo-vegetarians eat eggs but not dairy. Vegans, on the other hand, typically follow a plant-based diet that excludes all animal products. But egg-eating vegans? For some, eggs are an important addition to a stricter vegan diet. In fact, CNN recently reported that more and more vegans are eating eggs to help round out their diets with essential nutrients. Eggs and nutrition According to the Academy of Nutrition and Dietetics, diets that do not include eggs, fish, or a whole lot of algae are typically low in needed omega-3 fatty acids. Vegetarian diets also have a lower availability of iron, and can sometimes lack vitamins D and B-12. Davidson’s Safest Choice® pasteurized eggs Read More >

Eggs with Zoodles Recipe >

On 09.23.2016 by Kelsey Banfield

We are back in the weeknight swing and I'm working on some new dinner recipes to add to my current repertoire. Over the summer we got into two dishes: zoodles and shakshuka. Both are simple to make and taste delicious. Until now, I've been serving them separately, but this week I decided to combine them into one easy dish, eggs with zoodles. My plan was to bake the eggs in the tomatoes and serve them over zoodles for an easy, healthy dinner. Procuring the ingredients was easy. And, while I was doing so, I picked up some Davidson’s Safest Choice® pasteurized eggs. They are pasteurized in an all-natural warm water bath to eliminate the risk of Salmonella. Knowing this eases my mind when it comes Read More >

Egg In A Hole Breakfast Sandwich >

On 08.15.2016 by Lindsay Livingston, RD

I’m sharing the fourth recipe in a delicious series! So far we've covered protein-packed snacks with these baked scotch eggs, veggies for breakfast with this  spring breakfast salad (would be delicious with your fav summer veggies) and a summertime dessert with this strawberry cookies and cream ice cream (no ice cream maker required!) Today we're talking about back-to-school breakfast ideas. Even though I don’t yet have a kid in school, I know how hard it is to get back into a morning routine once school starts up again. Since breakfast is my favorite meal of the day, I hate when I hear about people skipping it this time of year because they feel like their mornings are too busy. So I thought I’d help you out a Read More >

Strawberry Rhubarb Ice Cream Recipe >

On 07.15.2016 by Kelsey Banfield

There is something about the strawberry and rhubarb flavor combination that screams summer to me. The tart rhubarb and extra sweet strawberries complement each other so perfectly. One can easily tell that the sweet flavor isn't from granulated sugar, it is a natural sweetness that can only be produced by warm fruit that has enjoyed a long spring growing in the sunshine. This ice cream opened the summer season for us last week. We returned from our annual Cooperstown 4th of July celebration and I set straight to work making it. I even made our homemade ice cream activities a little easier on us this year because I used our favorite Davidson’s Safest Choice®  eggs. They are pasteurized in an all-natural warm water bath to eliminate Read More >
