Summer is here and so is the heat. If you’re looking for an easy treat you can make at home for the hot summer months, homemade ice cream is always a winner in my opinion. Today I’m sharing a simple recipe for Strawberry Cookies and Cream Ice Cream with you. Added bonus- I chose to make a recipe that didn’t require an ice cream maker so anyone can make it! No special equipment needed. The trick to making ice cream without an ice cream maker is whipping the cream yourself to help infuse air into the recipe. The trick to making ice cream extra creamy, in my opinion, is adding egg yolks. The benefit of using Davidson's pasteurized eggs is that you can mix the yolks right Read More >
Happy Dance! It's time to break out the ice cream maker. 'Tis the season for homemade ice cream, after all. It's actually a fairly simple process, so there's no reason not to enjoy the freshest, creamiest ice cream around all spring and summer long—straight from your own kitchen. This brown sugar bourbon ice cream recipe is a version that will have you breaking out the ice cream maker over and over again. It tastes like boozy salted caramel. It is very important to allow the cooked base to cool down to room temperature before transferring it to the refrigerator to chill completely, prior to churning. The ice cream base can be made one day in advance. Besides serving it in a cup or cone, it's Read More >

It’s blueberry season once again, and I don’t know about you – I’m planning on stocking up this year. I’m going to buy pints and pints of blueberries, freeze them, and have good blueberries all year long. They are my absolute favorite fruit. I wanted to use blueberries in a different way, other than your typical blueberry pie, so I created this cupcake recipe. I made angel food cupcakes, which are nice, light, and perfect for summer. I’d forgotten how good angel food cake can be! Angel food cake is lower in calories than most cakes because it’s made with whipped egg whites (I used Davidson’s Safest Choice®, of course!) and doesn’t have any fat. I flavored the cake only with a little vanilla and Read More >
We’re pleased to share a post from More is More Mom, Vanessa Nunley. As the More is More Mom®, I’m all about………more lickin’ the brownie batter bowl! When we were married, Chuck and I received a lovely cake plate and dome as a wedding gift. For nearly 21 years, it has found a home in our kitchen; on the island, the table or the counter, and I always keep it filled with tasty and delicious baked goods. Over the years, our family has so enjoyed the memories made from sharing these treats that I now frequently present newlyweds with a cake plate and dome of their very own. Amanda has always been a wonderful mother’s helper. In fact, I’m pretty sure she’s perfectly capable of Read More >
There is nothing like homemade ice cream, so even though it is freezing in the Chicagoland area, Safest Choice™ celebrated Strawberry Ice Cream Day by trying this Strawberry Ice Cream like Ben and Jerry's recipe found on Food.com. Since most homemade ice cream recipes call for eggs, and many of those don't cook the eggs, it's a good idea to use Safest Choice™ pasteurized shell eggs. I followed the recipe exactly, even using a Donvier ice cream maker. If you have the time I recommend letting the strawberries sit longer than an hour so you have more strawberry syurp. If you do so, the amount of milk added may need to be reduced. Enjoy your own bowl of strawberry ice cream today too!
Nothing says fall or Halloween quite like pumpkins. In honor of the orange gourd Safest Choice put our safe eggs to use by making a recipe found at The Nibble.com, a magazine about gourmet and specialty foods. While pumpkin pie may be the most popular pumpkin dessert we prefer this pumpkin mousse because with every light and airy spoonful the feeling of fall comes over you through the melding of the spices, orange zest and pumpkin. Also, it can be served in a number of fun ways. The Nibble suggested hollowing out mini-pumpkins or using champagne glasses to serve the mousse in. We used small and large glasses so the layers of mousse, whipped cream and chocolate chips could be seen. However you decide, there will be Read More >
