The holiday season is in full swing—my favorite time of the year! It’s a period full of quality time with friends and family, along with celebrations galore. And where there’s celebration, there’s a bit of decadence. And where there’s decadence, there better be crème brûlée! If your holiday season is anything like mine, you’re probably surrounded with lots of loved ones who always seem to be hungry. But with so many events, you’re also likely to be short on time, too. No worries, I’ve got the perfect dish for you that will be a make-ahead lifesaver, while still wowing your ever-hungry crowds—crème brûlée French toast! Perfect for the holiday season and a great way to celebrate National French Toast Day, November 28! French toast usually Read More >
Now that Halloween is over and Thanksgiving is around the corner, I can totally relish the fact that fall is in full bloom. Here in San Diego, it doesn’t cool off and feel like autumn until November. We still haven’t given up our flip flops, but we just wear them AND our sweaters! This is also the time of the year where I make homemade pumpkin purée. I always have a stash of pumpkin goodness in the freezer. I like to sneak pumpkin into everything I make: soups, chili, and even pancakes! My pumpkin spice mug cake only needs 2 tablespoons of pumpkin purée. A mug cake is a super easy and quick way to enjoy a warm and fluffy cake in minutes. The baking Read More >
Having worked as a baker for a dessert food truck, I have a strong affinity for cupcakes. I’ve made thousands upon thousands of them. They might have started as a food trend but, in my humble opinion, they’re here to stay. These pumpkin cupcakes with marshmallow frosting and caramel drizzle are the perfect portable, festive, fall dessert. Inspired by classic sweet potato casserole with marshmallows, the pumpkin cupcakes are topped with a light and fluffy marshmallow frosting and finished with a light drizzle of homemade caramel (or store-bought caramel if you are short on time!). Similar to homemade meringue, the marshmallow frosting is made with just a handful of ingredients: Davidson's Safest Choice® pasteurized egg whites, fine granulated sugar, cream of tartar, salt, and pure Read More >

We are mere days away from summer…and you know what that means?? Sunny days, beautiful weather, shorts and flip flops all day long, and ice cream 24-7. Oh yes, ICE CREAM! And when ice cream is homemade—it’s even better. So dust off those fantastic churning machines and let’s get to work! Now I’ll be the first to admit, every time I think about making ice cream, I always stop and ask myself—is it worth the effort? Why not just go out and grab a pint? But then I remember how ridiculously easy it is to whip up a batch, particularly when you have a trusty ice cream maker that does all the churning work for you. Added bonus? You know every ingredient that goes in Read More >
Summer is here and so is the heat. If you’re looking for an easy treat you can make at home for the hot summer months, homemade ice cream is always a winner in my opinion. Today I’m sharing a simple recipe for Strawberry Cookies and Cream Ice Cream with you. Added bonus- I chose to make a recipe that didn’t require an ice cream maker so anyone can make it! No special equipment needed. The trick to making ice cream without an ice cream maker is whipping the cream yourself to help infuse air into the recipe. The trick to making ice cream extra creamy, in my opinion, is adding egg yolks. The benefit of using Davidson's pasteurized eggs is that you can mix the yolks right Read More >
There is nothing like homemade ice cream, so even though it is freezing in the Chicagoland area, Safest Choice™ celebrated Strawberry Ice Cream Day by trying this Strawberry Ice Cream like Ben and Jerry's recipe found on Food.com. Since most homemade ice cream recipes call for eggs, and many of those don't cook the eggs, it's a good idea to use Safest Choice™ pasteurized shell eggs. I followed the recipe exactly, even using a Donvier ice cream maker. If you have the time I recommend letting the strawberries sit longer than an hour so you have more strawberry syurp. If you do so, the amount of milk added may need to be reduced. Enjoy your own bowl of strawberry ice cream today too!
This year I decided to try my hand at making some homemade gifts. Of course, I decided to make food — mostly sweets — and in all of the recipes Safest Choice™ eggs were used. First, I made peppermint patties. This recipe calls for pasteurized eggs in order to make the peppermint dough center safely. If you have a stand mixer this no bake, five ingredient recipe from yumsugar.com is simple enough. I substituted 3 Safest Choice pasteurized shell egg whites in for the 1/4 cup liquid egg product. Just mix the dough, let it dry overnight, cover in dark chocolate and refrigerate for a few hours. Then enjoy this perfect holiday treat! Next, I baked chocolate chunk and white chip chocolate with dried cherries Read More >
