Brown Sugar 1/4 c 1/2 c 1 c 1 1/2 c
Bananas (peeled, chopped, caramelized, then frozen) 24 ea 48 ea 96 ea 144 ea
Rum extract (optional - to taste) 1/4 tsp 1/2 tsp 1 tsp 2 tsp
Cinnamon (ground) 1 tsp 2 tsp 4 tsp 2 Tbsp
Vanilla ice cream 2 1/4 qt 4 1/2 qt 2 1/4 gal 3 1/4 gal

Banana SmoothieMethod of Preparation

1. Caramelize the bananas: heat sauté pan with butter over medium heat. Add bananas and brown sugar, sauté until golden brown. Remove from heat and place in freezer until cold and ready to use.

2. Mix all ingredients in blender until smooth and creamy.

3. Garnish with powdered cinnamon. (Alternately, garnish with cinnamon stick.)

Chef Notes

Banana liqueur may be added for additional alcohol content.
