Chef John’s French Toast Sandwich recipe for food service!

| Sausage Pork Patty Cooked (Hot) (1.33 Oz) | 25 | |||
| Syrup, Maple Flavor | 1 1/2 Quart + 1/4 Cup | |||
Instructions
- Reduce syrup by half by simmering.
- Place fried egg, sausage patty on one slice of French toast round.
- Put the syrup reduction on second slice.
- Place slice on top with syrup side in.
- Cut in half.
- Serve hot or wrap and place in warmer.
Yield: 25 Sandwiches

With over forty five years of Food Service experience, John has a multi-faceted background in management and culinary services. He has been the Director of Food and Nutrition Services at some of the largest and most prestigious Healthcare Systems in the country, including the Memorial Healthcare System in Houston, Texas, and the Evanston Northwestern Healthcare System in Chicago, Illinois and currently at Lakeland Regional Medical Center, in Lakeland FL. John has been a Regional Vice President for a major food management company and has been a Culinary Arts Instructor, Financial Analyst and Computer Software Instructor, all within the food service industry.
John has also served as a Food Service Manager at Eastman Kodak, the largest single industrial feeding operation in the country, at the time, serving over 40,000 meals a day. Not only does he bring a wealth of management expertise to our clients, John is also a passionate and accomplished Certified Executive Chef. John is recognized as an industry expert in cook-chill production. He is also a Certified Food Executive through the National Food Services Executive Association.
John attended Paul Smith’s College and Cornell University and where he earned a Degree in Hotel and Restaurant Management. John was awarded the Statler Hilton Merit Award for Academic Achievement. John earned his Master Chef’s papers while running the upscale night club Rumza, Anguilla, BWI.
John is a past president of the Optimist International and served for many years in the Junior Achievement Organization.
