Safest Choice™ Classic Holiday Eggnog Recipe

12 Safest Choice™ pasteurized egg(s), separated
1 ½ c granulated sugar
1 qt (4 cups) heavy cream
2 c whole milk
2-3 c dark rum, bourbon or brandy (optional)
2 Tbsp vanilla extract (optional)
ground nutmeg or cinnamon to taste
Yield: 20 servings
Serving size: 3/4 cup without alcohol
Note: Nutrition facts do not include optional rum, bourbon, or brandy.
- Place egg yolks in large bowl. Beat with electric mixer until combined.
- Gradually add sugar, beating until mixture is thick and pale yellow.
- Stir in cream and milk, then rum and vanilla, if desired.
- Cover and refrigerate until chilled or as long as overnight. Just before serving, beat room temperature egg whites with electric mixer until soft peaks form.
- Stir egg yolk mixture. Gently fold in beaten egg whites. Pour eggnog into punch bowl. Sprinkle with nutmeg.

12 Safest Choice™ pasteurized egg(s)
1 c confectioners’ sugar
¼ cup vanilla extract
4 c skim milk
1 Tbsp rum extract (optional)
ground nutmeg to taste
Yield: 10 servings
Serving size: 3/4 cup
- Break eggs into large bowl. Beat eggs until light in color.
- Mix in confectioner’s sugar and vanilla.
- Add evaporated milk. Blend with egg mixture for 30 seconds.
- Cover eggnog closely and let ripen in the refrigerator for 24 hours. Stir again and serve sprinkled with freshly grated nutmeg or other garnishes.

Eggnog Recipe

6 Safest Choice™ pasteurized egg(s)
½ c powdered Splenda®
2 Tbsp vanilla extract
2 c skim milk
1 tsp rum extract (optional)
nutmeg or cinnamon for garnish
Yield: 5 servings
Serving size: 3/4 cup
- Break eggs into large bowl. Beat eggs until light in color. Mix in Splenda® and vanilla. Add skim milk. Blend with egg mixture for 30 seconds.
- Cover eggnog closely and let ripen in the refrigerator for 24 hours.
- Stir again and serve sprinkled with freshly grated nutmeg or other garnishes.
