Real Caesar Salad Dressing

Serving: 4oz (about 1 1/2 cups)

Safest Choice™ Pasteurized Eggs 3 ea 6 ea 12 ea
Freshly squeezed lemon juice 3 oz 3/4 c 1 1/2 c
Coarse salt 1/4 tsp 1/2 tsp 1 tsp
Worcestershire sauce 1/2 tsp 1 tsp 2 tsp
Finely chopped garlic 1 to 2 Tbsp
(4 to 6 med cloves)
3 Tbsp
(10 to 12 med cloves)
6 Tbsp
(20 to 24 med cloves)
Anchovy fillets, mashed OR 3 ea 6 ea 12 ea
Anchovy paste 1 1/2 tsp 1 Tbsp 2 Tbsp
Extra virgin olive oil 1 c 2 c 1 qt
Freshly grated Parmesan cheese (Parmigiano Reggiano) 3/4 c 1 1/2 c 3 c
Romaine lettuce (chopped) 18c (36 oz) 36c (72 oz) 72c (144 oz)
Croutons 2c 4c 8c
Coarsely ground black pepper
  1. Combine first six ingredients in blender or food processor; process until blended.
  2. With motor running, slowly drizzle in olive oil; process until dressing is well combined and creamy. Stir in half of Parmesan cheese.
  3. Place lettuce in serving container. Add dressing and croutons; toss until coated.
  4. Divide evenly onto chilled salad plates. Sprinkle each salad evenly with remaining Parmesan cheese. Add coarsely ground pepper, as desired.
