Cider-Pumpkin-Pomegranate Smoothies Recipe
Celebrate autumn with this delicious smoothie!

Ingredients
- 1 3/4 c chilled apple cider
- 3/4 c chilled pomegranate juice
- 1 c plain non-fat yogurt or vanilla yogurt
- 1 c canned pumpkin (not pie mix)
- 2 Safest Choice™ pasteurized egg(s)
- 1 tsp pumpkin pie spice
- 1 medium-size apple (unpeeled, core removed), optional*
- Whipped cream (optional)
Preparation
Place all ingredients except whipped cream in blender container; blend until smooth. Serve immediately, topped with whipped cream, if desired.
Notes
*Use Gala, Fuji, Golden Delicious or other favorite apple.

Me again...I learned something that I want to share.
I made this a second time for my family and didn't add eggs. They said it didn't taste as good. So I poured it all back into the Vita Mix and added 2 eggs. The result, my family reported, was much better!
I'm not making this up -- the eggs make a difference! They seemed helped the flavors meld together and added a richer flavor and velvety texture.

This is really really good. The recipe makes large servings but I was ok with it because it's so good and good for you. I love that it has a lot of protein and fiber. I will definitely be making more of these.

Wow this is a really good recipe. Great autumn taste! I'm guessing there are lots of antioxidants in here too so I don't feel as guilty about drinking a lot of it. I added the apple for the extra fiber and didn't have any whipped cream. YUM!
