Egg Salad & Smoked Salmon Canapés Recipe

Safest Choice™ Hard-Boiled Eggs and smoked salmon are a stunning combination in this quick-prep favorite. Beautiful with fresh berries on the side!

Ingredients

  • 5 Safest Choice™ pasteurized egg(s), hard-boiled
  • 2 Tbsp mayonnaise (light)
  • 1 tsp whole grain mustard
  • salt to taste
  • pepper to taste
  • 4 oz watercress (rinsed with stems removed and chopped)
  • 6 oz smoked salmon
  • 3 slices marble rye bread

Preparation

  1.  Dice the eggs. Combine eggs with mayonnaise, mustard, salt, and pepper.
  2.  Fold in the watercress.
  3.  Slice the smoked salmon into 2 oz portions.
  4.  Toast bread.
  5.  Prepare by first placing smoked salmon on bread, then placing egg salad on top.
