Egg Salad & Smoked Salmon Canapés Recipe

Ingredients
- 5 Safest Choice™ hard-boiled egg(s)
- 2 Tbsp mayonnaise (light)
- 1 tsp whole grain mustard
- salt to taste
- pepper to taste
- 4 oz watercress (rinsed wtih stems removed and chopped)
- 6 oz smoked salmon
- 3 slices marble rye bread
Preparation
- Dice the eggs. Combine eggs with mayonnaise, mustard, salt, and pepper.
- Fold in the watercress.
- Slice the smoked salmon into 2 oz portions.
- Toast bread.
- Prepare by first placing smoked salmon on bread, then placing egg salad on top.
