Ingredients

  • 2 Tbsp olive oil
  • 1 Safest Choice™ pasteurized egg(s)
  • pinch salt
  • 1/4 c tomato sauce
  • 1/4 c mozzarella cheese, shredded
  • 1 Tbsp Parmigiano-Reggiano cheese, shredded
  • 1 slice Italian Bread

Preparation

  1. Place a slice of Italian bread in a frying pan coated in olive oil over medium to low heat.
  2. Crack the egg over the bread. Add salt, add tomato sauce, mozzarella cheese and Parmigiano-Reggiano.
  3. Cook until egg is cooked, sauce begins to bubble, and the cheese is melted.

★★★☆☆  Well, this is like a poor man's pizza. Good, healthier than a pizza and will kill that pizza craving. I liked the tip of grilling the other half of the bread first to cook the egg f.a.s.t.e.r. and adding Italian seasoning which I did (crushed red pepper, Krazy salt, oregano and garlic powder) with additional freshly grated parma after cooking. Cook slowly, use in place of pizza and enjoy!

★★★☆☆  Simple recipe and really good. I love ketchup with my eggs so I thought pizza sauce would be even better. I decided to grill one side of the bread and then flip it over before cracking the egg on it because I wanted to be sure the egg got cooked thouroughly.

Next time I make this I think I will sprinkle some Italian Seasonings on them.
