Safe Caesar Salad Recipe

A classic salad, with fresh dressing made using eggs and lemon juice. Perfect for a quick meal on a warm summer day! Works well with protein add-ins, like grilled chicken.

Ingredients

  • 2 Tbsp (1/2 lemon) freshly squeezed lemon juice
  • pinch coarse salt
  • 6 Tbsp extra-virgin olive oil
  • 3 drops Worcestershire sauce
  • 1 to 2 tsp finely chopped garlic (1 to 2 medium cloves)
  • 1 Safest Choice™ pasteurized egg(s)
  • 1 anchovy fillet, mashed (or 2 inches of anchovy paste)
  • 4 Tbsp (1/4 cup) freshly grated Parmesan cheese (Parmigiano Reggiano), divided
  • 1 head romaine lettuce, torn into bite-size pieces
  • 3/4 c croutons
  • coarsely ground black pepper

Preparation

Dressing

  1. In a blender or food processor combine the first six ingredients until blended.
  2. With the motor running, slowly drizzle in the olive oil.
  3. When the dressing is well combined and creamy, pour it into a bowl and stir in 2 Tbsp. of the Parmesan cheese.

Serving

  1. In a large salad bowl, pour dressing over the lettuce, add croutons and toss until coated.
  2. Divide onto chilled salad plates and sprinkle each salad with the remaining 2 Tbsp. Parmesan cheese and coarsely ground pepper.
  3. Serve immediately.

Variations

Add sliced grilled chicken for a heartier Caesar salad.
