  • 1/2 avocado
  • 1 tsp lemon juice
  • 1 Tbsp fresh cilantro (optional)
  • salt to taste
  • pepper to taste
  • 2 slices whole grain bread

Preparation

  1. Mash avocado with lemon juice, cilantro, salt, and pepper. Spread mixture over toasted bread and top with poached eggs.
