Breakfast Bruschetta Recipe

If you're looking for a quick and hearty meal in the morning, try this breakfast bruschetta. The safe mayonnaise aioli and hard-boiled eggs can even be prepared the night before for an easy grab-and-go breakfast.

Safe Mayonnaise Aioli Ingredients

Ingredients

  • 1 Davidson's Safest Choice® pasteurized egg(s)
  • 1 Davidson's Safest Choice® pasteurized egg yolk(s)
  • 1 Tbsp fresh lemon juice
  • 1 tsp red or white wine vinegar
  • 1 tsp Dijon-style mustard
  • 1/2 tsp salt
  • pinch cayenne
  • 1 c olive oil
  • 2 tsp lemon zest
  • 1 - 2 minced garlic cloves

Preparation

  1. In food processor or blender, combine whole egg, egg yolk,  lemon juice, vinegar, mustard, salt, and cayenne. Process until well-blended. With motor running, slowly pour in 1 cup olive oil in steady stream until mixture thickens. Stir in lemon zest and garlic.
  2. Refrigerate leftover aioli.

Breakfast Bruschetta Ingredients

  • 4 Davidson's Safest Choice® pasteurized egg(s)
  • 2 1/2 Tbsp safe mayonnaise aioli
  • 1 Tbsp chopped chives
  • 4 slices wheat country loaf, cut diagonally about 1/4-inch thick, lightly toasted
  • 1 small tomato, thinly sliced (8 slices)
  • 1/4 c cup crisp crumbled bacon (optional)
  • additional chopped chives (optional) to taste
  1. Carefully arrange pasteurized eggs in single layer in saucepan, then add enough water to cover eggs by at least 1 inch. Bring water to rolling boil over high heat. Remove pan from heat, cover, and let stand about 8 minutes for medium-boiled eggs or 15 minutes for a hard-cooked yolk. Drain; run under cold water until eggs are cool. Peel and slice.
  2. Meanwhile, stir chives into aioli. Spread on one side of the toast slices. Arrange two slices of the tomato over aioli. Top with egg slices. Sprinkle with bacon and chives, if desired.

Notes

This recipe yields more Safe Mayonnaise Aioli than needed for the breakfast bruschetta recipe.
