Ingredients

  • 6 Davidson's Safest Choice® pasteurized egg(s), hard-boiled
  • 3 Tbsp olive oil
  • 2 tsp Dijon mustard
  • 1/2 tsp kosher salt
  • 1/8 tsp black pepper
  • 1 tsp curry powder
  • 2 Tbsp golden raisins
  • 2 Tbsp dried cranberries
  • 1 c baby arugula

Preparation

Cut hard boiled eggs into small dice. In a small bowl combine the eggs with the remaining ingredients and stir well to combine. Fold in arugula and serve salad on whole wheat bread or with crackers.

I love Tumeric/curry with my Davidson's eggs. Davidsons Eggs have a much better taste than so many other brands.
Keep the recipes coming. I love the healthy sugar free ones.
