Green Eggs & Ham Popovers Recipe

The best thing about these green eggs and ham popovers are the crunchy outside and light, airy inside topped with additional cheese and jalepeño while still fresh from the oven.

Ingredients

  • 1 c whole or 2% milk
  • 3 Davidson's Safest Choice® pasteurized egg(s)
  • 4 Tbsp unsalted butter, melted and divided
  • 3/4 c grated cheddar cheese, reserve 1/4 cup for topping
  • 4 slices bacon, cooked and chopped
  • 1 c (5 ounces) all-purpose flour
  • 1/2 tsp salt
  • 1/2 jalapeño pepper, sliced

Preparation

  1. Heat the oven to 450°F.
  2. In a blender, or with a whisk and a bowl, mix the milk, eggs, and one tablespoon of the melted butter until completely combined. Add the flour, salt, bacon, and 1/2 cup of the cheddar cheese. Blend until frothy.
  3. Put the popover tin or muffin pan in the oven for 2 minutes to warm. Remove from the oven and divide the remaining melted butter between the cups. Fill each popover cup 2/3 to 3/4 full.
  4. Place the pan back into the oven and bake for 15 minutes. Do no open the oven door during baking.
  5. Reduce the heat to 350°F and bake for another 15 minutes or until dry and crusty. Now you can open the oven door and check the popovers. They should be golden brown, feel dry to the touch and sound hollow when tapped.
  6. Make a one-inch slit in each popover, sprinkle with the remaining cheddar cheese and a jalapeño slice. Put back in oven to melt the cheese. Remove and serve immediately.
