Ingredients

  • 1 bunch spinach, rinsed and trimmed
  • 8 mint leaves
  • 6 sprigs cilantro leaves
  • 1 green chili
  • 1 tsp garlic ginger paste
  • 2 tsp oil
  • 1/2 onion, sliced
  • 1 tomato, chopped
  • salt to taste
  • pepper to taste
  • 2 tsp cumin powder
  • 6 Davidson's Safest Choice® pasteurized egg(s)

Preparation

  1. In a large pot, boil spinach until soft; strain and save about 1/4 cup water for later use.
  2. Mix spinach, mint, cilantro, green chili, garlic ginger paste, and spinach water in a blender until smooth. Set aside.
  3. Heat oil in a skillet over medium heat and sauté onion until slightly brown. Add tomatoes and cook until slightly soft. Season with salt, pepper, and cumin powder and let cook for 2-3 minutes.
  4. Add onion and tomato to masala mixture in blender and purée everything together until smooth.
  5. Place mixture back in skillet and gently simmer for 1-2 minutes.
  6. Boil eggs to desired doneness. Slice boiled eggs; place on curry and serve.
