This hummus deviled eggs recipe substitutes hummus for the mayonnaise to make a light and healthy version of the classic recipe.

Ingredients

  • 6 Davidson's Safest Choice® pasteurized egg(s), hard-boiled
  • 1/4 c roasted red pepper hummus
  • salt to taste
  • pepper to taste
  • paprika (optional) to taste

Preparation

  1. Slice egg in half from top to bottom. Remove the yolks from the eggs and place in a mixing bowl; mash with a fork. Add hummus, salt, and pepper; combine until the mixture is smooth.
  2. Scoop mixture into a large baggie or piping bag and distribute evenly between the 12 egg halves. Garnish with paprika and enjoy!

Variations

Avocado Deviled Eggs

Substitute 1/2 mashed avocado, 1 teaspoon lemon juice, and 1 teaspoon hot sauce for the hummus.

Buffalo Deviled Eggs

Substitute 3 tablespoons plain Greek yogurt, 2 tablespoons hot sauce, and 2 tablespoons light blue cheese dressing for hummus. Add blue cheese crumbles (optional).

As a person allergic to hummus, I have had the misfortune of encountering hummus deviled eggs. Please be sure to label ingredients!
