Mini Crustless Dark Chocolate Cherry Cheesecakes Recipe

Ingredients

  • 2 8 oz. packages Neufchâtel cheese
  • 2 Davidson's Safest Choice® pasteurized egg(s)
  • 1 c frozen pitted dark sweet cherries, thawed
  • 1/4 c dark cocoa powder, unsweetened
  • 1/4 c coconut sugar (or brown sugar)
  • 1 tsp vanilla
  • whipped cream (optional for topping)
  • 1 oz dark chocolate, shaved or grated (optional for topping)

Preparation

  1. Preheat oven to 350°F. Line a muffin tin with muffin liners and spray with non-stick cooking spray.
  2. Combine Neufchâtel cheese, eggs, cherries, cocoa powder, sugar, and vanilla in a food processor and blend until smooth and combined. Pour batter into prepared muffin tins and bake for 15-18 minutes or until cheesecakes are slightly puffed and centers are set.
  3. Remove from oven. Let cool and refrigerate overnight or at least 2 hours to set. When ready to serve, top each mini cheesecake with a dollop of whipped cream and shaved dark chocolate.
