Nanaimo Bars Recipe

This recipe was a finalist in our 'No Bake' Recipe Contest! These no-bake nanaimo bars are incredible and decadent — the perfect recipe for sharing!

Base

Ingredients

  • 12 Tbsp butter (1 1/2 sticks), room temperature
  • 1/3 c granulated sugar
  • 2 Davidson's Safest Choice® pasteurized egg(s)
  • 1 1/2 tsp vanilla
  • 1/2 c unsweetened cocoa
  • 3 c graham cracker crumbs
  • 1 1/2 c shredded coconut

Preparation

  1. Cut butter into at least 12 pieces, and place with sugar in the bowl of a stand mixer. Beat using paddle attachment until creamy. 
  2. Add eggs and vanilla and whip until smooth. Add cocoa and mix well. Remove bowl from mixer and add graham cracker crumbs and coconut. Mix well with a wooden spoon, then spread mixture on the bottom of a 9x13 inch baking pan.

Filling

  • 6 Tbsp butter, room temperature
  • 3 c confectioners' sugar
  • 1 package of vanilla instant pudding (3.5 oz)
  • 1/3 c whole milk
  1. Cut butter into at least 6 pieces and place with confectioner's sugar in the bowl of a stand mixer. Beat using the paddle attachment until creamy. Add pudding and milk, and whip until smooth. 
  2. Spread evenly over crumb base and refrigerate for at least 15 minutes.

Topping

  • 1 1/2 c semi-sweet chocolate chips
  • 4 Tbsp heavy cream
  • 2 Tbsp whole milk
  1. Place chocolate chips in top of double boiler and heat until melted. Add cream and milk and mix until smooth.
  2. Spread evenly over the filling and refrigerate for at least two hours.
  3. Cut into 12 squares and serve.
