No-Cook Ricotta Mousse Recipe

This no-cook ricotta mousse recipe is simple and creamy. Best of all, it can be topped countless ways. Recipe courtesy Diane Boyd of Cape Fear Nutrition.

Ingredients

  • 1 Tbsp honey
  • 2 Davidson's Safest Choice® pasteurized egg yolk(s)
  • 1 c part skim ricotta cheese
  • 1/4 c almonds, sliced
  • 1/2 c strawberries, sliced
  • 1 Tbsp balsamic glaze
  • arugula (optional garnish)

Preparation

  1. In a small mixing bowl blend honey and egg yolks with an electric mixer. Add ricotta cheese and blend until light and fluffy. Spoon into individual serving bowls.
  2. Top each bowl with almonds, strawberries, and balsamic glaze. Garnish with fresh arugula. Serve immediately.
