Pancetta, Potato & Egg Cups with Chipotle Adobo Sour Cream Sauce Recipe

These pancetta, potato & egg cups with chipotle adobo sour cream sauce are perfect for breakfast or to serve as an appetizer at your next party. They’re layered with mashed potatoes, eggs, and chipotle adobo sour cream sauce. Recipe courtesy Emily of Zen & Spice.

Ingredients

  • 4 russet potatoes, peeled and sliced
  • 1/2 c milk
  • 2 Tbsp butter
  • 1/4 tsp kosher salt
  • freshly ground black pepper to taste
  • 1/2 c sour cream
  • 1 Tbsp chipotle peppers in adobo
  • 4 Davidson's Safest Choice® pasteurized egg(s)
  • 12 slices pancetta
  • shredded parmesan to taste
  • chopped cilantro to taste

Preparation

  1. Preheat oven to 400°F. Spray 12 muffin tin cups with cooking spray.
  2. Put potatoes in large pot and cover with water. Bring to boil, uncovered, and cook until fork tender, about 15 minutes. Drain potatoes, and add milk, butter, salt, and pepper. Using a fork or potato masher, mash until smooth.
  3. In small bowl, combine sour cream and chipotle sauce. Whisk until combined.
  4. In another small bowl, crack eggs and whisk. Add three tablespoons of sour cream mixture and stir well.
  5. Place one piece of pancetta into each cup, add 1/4 cup of mashed potatoes, and pour egg and sour cream mixture on top. Top with shredded parmesan.
  6. Bake for about 15 minutes, until egg is set. Sprinkle with remaining sauce and cilantro.
