Safest Choice™ Apple Custard Pie Recipe

The Safest Choice™ apple custard pie is made with an easy press-in crust under warm, cinnamon apples and a creamy custard for a fun twist on apple pie.

Crust Ingredients

Ingredients

  • 1 c all-purpose flour
  • 1/4 tsp baking powder
  • 1/2 c (1 stick) unsalted butter at room temperature
  • 1/2 c sugar
  • 1 Davidson's Safest Choice® pasteurized egg(s)

Preparation

  1. Preheat oven to 400°F.
  2. Whisk flour and baking powder in medium bowl until combined; set aside. In large bowl with electric mixer on high speed, beat butter and sugar 1 minute. Lower speed to medium. Add egg, beating until incorporated. Gradually add flour mixture until fully mixed, about 1 minute. The dough will be very soft.
  3. Place dough in 9-inch pie plate. Using floured hands, push dough evenly onto bottom and sides of plate to form crust. Chill until ready to fill.

Filling Ingredients

  • 1 c sugar
  • 1/4 c all-purpose flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3 Davidson's Safest Choice® pasteurized egg(s)
  • 2 lb apples, peeled, cored, and thinly sliced crosswise (1/4 inch thick or less)
  1. Whisk together sugar, flour, cinnamon and nutmeg in large bowl. Add eggs; whisk until smooth. Add apples and mix well. Pour into pastry-lined pie plate.

Topping Ingredients

  • 1/2 c all-purpose flour
  • 1/4 c packed light brown sugar
  • 1/3 c cold butter, cut into pieces
  1. Place flour and brown sugar in medium bowl. Add butter; using a fork, mix until mixture resembles coarse crumbs.
  2. Spoon topping over apples. Bake about 50 minutes, until crust and topping are golden brown. (Cover pie with aluminum foil if browning too quickly.) Cool completely on wire rack before serving.
