Soft Scrambled Cheesy Eggs on Avocado Brioche Recipe

Ingredients

  • 1 loaf of brioche bread cut into 1 1⁄2 inch thick slices
  • 3 Tbsp olive oil, divided use
  • salt to taste
  • 1 1/2 avocados, sliced
  • pepper to taste
  • 1 tsp chili oil
  • 3 large radishes, thinly shaved
  • 1 lime, juiced
  • 4 scallions, finely chopped
  • 1 tsp unsalted butter
  • 8 Davidson's Safest Choice® pasteurized egg(s)
  • 2 oz cream cheese, cut into bits and softened
  • 3 oz truffle pecorino
  • 1 Tbsp furikake (garnish)

Preparation

  1. Brush sliced bread with one tablespoon olive oil and season with salt. Place bread on baking sheet in 350° F preheated oven for 5 minutes or until lightly toasted. Remove from oven and top bread with sliced avocado. Season avocado with salt, pepper, and chili oil.
  2. Toss radishes with olive oil and lime juice; season with salt and pepper and set aside.
  3. In small non-stick skillet, cook scallions in butter over moderately low heat, stirring, until they are soft.
  4. In a bowl whisk together eggs, cream cheese, and salt and pepper to taste. Pour egg mixture into skillet and cook mixture over low heat, whisking, for 3 to 4 minutes, or until it is just cooked through. Fold in the truffle pecorino.
  5. Top bread and avocado with soft scramble and garnish with radish mixture and furikake.
