Southwest Bacon and Caramelized Onion Quiche Recipe

This southwest bacon and caramelized onion quiche takes all the best ingredients of a rich and creamy quiche and adds caramelized onions, bacon, and green chiles. This quiche is easily customizable to whatever you have on hand at the time! Recipe courtesy Chris of Shared Appetite.

Ingredients

  • 1 frozen 9-inch pie crust
  • 1 c heavy cream
  • 3 Davidson's Safest Choice® pasteurized egg(s)
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 1 large onion, caramelized
  • 8 slices cooked bacon, chopped
  • 1/4 c canned green chiles
  • 1/2 c frozen corn
  • 1 c shredded pepper jack cheese

Preparation

  1. Preheat oven to 350°F. Place frozen pie shell on a baking sheet. In a medium mixing bowl, whisk together heavy cream and eggs. Season with kosher salt and freshly ground black pepper.
  2. Layer caramelized onions, cooked bacon, green chiles, and frozen corn in the pie shell. Sprinkle with pepper jack cheese, and pour in egg mixture. Press any toppings down so they're covered by the liquid.
  3. Bake for 40 minutes, until the eggs are set. Let cool slightly before serving.
