Spinach, Kale, and Steak Torte Recipe

Ingredients

  • 1 Tbsp coconut oil
  • 1/2 c leftover cooked steak, chopped
  • 1 c kale, chopped
  • 1 c spinach, chopped
  • 1/2 c mushrooms, sliced
  • 1/4 c onion, diced
  • 1/4 c marinated artichokes, chopped
  • 8 Davidson's Safest Choice® pasteurized egg(s)
  • 1/2 c heavy cream
  • 1/2 c swiss cheese, shredded

Preparation

  1. Heat oven to 450°F. Add coconut oil to large oven-proof skillet and melt over medium heat. Add steak, kale, spinach, mushrooms, onion, and artichokes. Sauté until spinach and kale have wilted.
  2. Add eggs and cream to large bowl and whisk well. Pour eggs over spinach mixture and sprinkle with Swiss cheese; cook for 2 - 3 minutes, until edges have started to set.
  3. Transfer to oven and bake for 10-15 minutes—until torte is cooked through and set in middle.
